When we think about meatloaf, we often think about the beefy meal covered in tomato sauce that our mom’s made when we were little.
In my house, meatloaf is one of Greg’s favourites, and something we don’t make often enough I’m told. We’ve made the beef version many times, like Italian Meatloaf by Michael Chiarello which always turns out great. This time we wanted to try something new, so I went searching for a recipe that was completely different, and here it is from the Dietitians of Canada Simply Great Food cookbook:
2 cloves of garlic, minced
1 tart apple, such as Mutsu or Granny Smith, finely chopped
1 lb. (500g) ground turkey
1/2 cup chopped onion
1/3 cup oat bran
1/3 cup ground flaxseed
3 tbsp. prepared yellow mustard
1 tbsp. ketchup
1 tsp salt
Preheat oven to 350ºF .
In a large bowl, combine garlic, egg, apple, turkey, onion, oat bran, flaxseed, mustard, ketchup and salt. Pack into a 9″ x 5″ lightly greased loaf pan.
Bake in preheated oven for 45 to 60 minutes or until a meat thermometer inserted into the centre registers an internal temperature of 175ºF.
Meatloaf is usually pretty easy to make , and this one is no different. Chopping the Granny Smith apple required the most elbow grease. What’s great about this recipe is that you can also make it into burgers, so preparing a double-batch, making patties and then freezing them for future use is a great weekday time-saver.
The meatloaf was moist and light, and the apple once cooked was sweet, not tart. Paired with a side salad this meatloaf was the perfect and relatively healthy Sunday dinner. ~kM
